Most of the garbage consists of pottery shards, all common tableware, while prestige objects are entirely absent. Other significant garbage components include numerous fragments of cooking ovens, wall plaster, animal bones and plant remains. Of the pottery vessels, cooking pots are the most abundant type. Most of the refuse turns out to be “household garbage” originating in the domestic areas of the city, while large numbers of cooking pots may point to the presence of pilgrims. Significantly, the faunal assemblage, which is dominated by kosher species and the clear absence of pigs, set Jerusalem during its peak historical period apart from all other contemporaneous Roman urban centers. This assumption is now undermined, reviving questions of the origin and mechanism of these changes as well as the influence of Gaul's agricultural particularities in the process. To investigate this question we used a geometric morphometric approach to study the phenotypic relationships of almost 600 dental remains of pigs (Sus scrofa) from 11 Gallic and Italian sites, and pinpoint evidence of Roman or indigenous signature on the livestock. The comparison of these different samples allowed us to demonstrate that the link between the Roman and Gallic pigs is weak, and, more importantly, that each of the two territories, from its own animals, followed its own livestock management model. Furthermore, it seems that within Gaul, each region or settlement adopted their own particular pastoral or supplying strategies; apart from two urban sites of central Gaul which showed clear phenotypic relationships with southern populations. These results suggest that the pigs' morphology depended mainly on agricultural and economic characteristics of the different territories, within Gaul and Italy, except perhaps on some urban sites with different supply strategies. It seems, therefore, that the changing economic environment impacted both provinces independently, or at least differently, since it cannot be excluded that there may have been some commercial relationships between them. The results show that important transformations occurred in livestock management, as it is visible through various changes in the body size of the main domesticates. The Romans had a great interest in improving1cattle breeds,2 while during the Middle Ages most effort was put in improving sheep breeds. The size of the three taxa decreased after Roman times, reaching their minimum size between the 8th and 9th centuries, probably in association with changes in livestock management, including free-range keeping and non-selective breeding. Until now, this assertion has been supported by little material evidence. In this study, the carbon and nitrogen isotope values of local arcahaeological and, modern wild herbivores from known environments were used to determine the environmental origins of domesticated sheep and goat that were traded and consumed in Early Roman Jerusalem. Pinpointing the environmental origins of these herd animals can determine if they were raised in specialized farms in the vicinity of Jerusalem, brought to the city by local pilgrims, or were part of organized importation of sacrifice animals from desert regions that lie beyond the boundaries of the province of Judea. The results indicate that at minimum 37% of the goat and sheep consumed in Jerusalem during the Early Roman period were brought from desert regions. The inter-provincial importation of animals to Jerusalem to meet high demands for sacrifice by pilgrims is the first material evidence for large scale economic specialization in the city. Furthermore, the results imply that desert animals were further marketed for domestic use in contemporaneous farm sites out of Jerusalem. The new isotope data presented here are from Fishbourne Roman Palace (Sussex), two sites on the Isle of Thanet (Kent) and a further two sites in London. In spite of small sample sizes the data make an important contribution to the very limited corpus of scientific research on the species and provide new resolution to the nature of fallow deer movement and management in Roman Britain.
